Peanut Butter Breakfast Bars With Leftover Oatmeal

I posted this at my breakfast blog, but decided I would post it here, too.

My kids are not big oatmeal fans, but I feel like we should have it at least once a week, especially since it's so nutritious and cheap.  I would love to be able to have it more often.  I was delighted when I came across this recipe for using leftover oatmeal.  

Peanut Butter Bars With Leftover Oatmeal

2 c. leftover oatmeal
1/2 c. butter or coconut oil, softened
1 c. sweetener (or 1/2 c. honey, just watch that it doesn't get the batter too moist)
1 egg
1 c. whole grain flour
1/2 t. baking soda
1/2 c. peanut butter
1 t. vanilla

Cream butter, sweetener and eggs in a bowl.  Add oatmeal and other ingredients.  Mix well.  Spread into a greased 9 x 13 pan.  Bake at 350 for about 25 minutes.  Cool and cut.

This can also be served hot in bowls with milk on top.

I'm really tired of the Cardinals whining because the Packers played to win last week.  When did it become acceptable to play to lose?  I'm encouraged by the fact that the Cowboys and Jets both repeated their last weekend victories this weekend.

Liebrary

Thanks to Nancy for bringing the Liebrary game.  It's similar to the Wise and Otherwise game we've played in the past.  With Liebrary, you're given the title of a book and a summary of the plot.  Each person or team contributes their version of an opening line, plus the correct opening line is available.  The teams then need to guess which is the correct opening sentence.

I think this game is more challenging than Wise and Otherwise, (plus I was rather tired and there was quite a bit of background noise in the room) but it was definitely fun.  Hopefully Nancy will bring it to future gatherings.

Oh, and the Liz/Char team of Napolean Queens squeaked past the Randy/Al/Bob/Jim team of Rallybob for first place.

Sheepshead

There were several games throughout the day.  The 'We' team, consisting of Jim, Tony and Char was beating the 'They' team of Randy, Melissa and Ray before lunch.
